Filipa Pato & William Wouters are a magical couple united by the passion of wine and gastronomy.

Our philosophy is simple: to create authentic wines that faithfully mirror their origin. Focusing only on the traditional Bairrada grape varieties, we work exclusively with Baga, Bical, Arinto, Cercial and Maria Gomes. The vineyard is our priority, and from an early stage we abandoned the use of herbicides, in favour of soil health and biodiversity in the vineyard. Thanks to a permanent research of the surrounding plants, forest and some cultivated in our backyard, today we use about 15 different plants in our Biodynamic preparations. In the winery the intervention is minimal, the grapes are selected in the vineyard, we ferment with indigenous yeasts and we use ancestral methods such as wood mills and amphorae. The evolution of the wine is rigorously monitored so that each wine expresses the authenticity of our old vines. Ultimately, we create "Terroir" wines, uniting knowledge, art and nature to produce "no make-up", each wine with its own character. Filipa Pato - winegrower in Bairrada. Graduated at the University of Coimbra in chemical engineering, she refined her winemaking skills by making vintages in Bordeaux - France, Mendoza - Argentina, in Margaret River - Australia and with her father, Luís Pato, the Baga rebel.
